Created by owner Nick Nitti, the menu features over 20 handcrafted Neapolitan pizzas as well as antipasti and salads. Pizza Napoletana is made with soft, handcrafted dough using Italian-milled flour, filtered water, sea salt and fresh yeast Forno Rosso exclusively uses Caputo Flour from Naples Italy in all of their pizzas, creating a crisp, flavorful crust with a chewy center. Once the pizzas are placed in the one thousand degree wood-burning oven, it takes about sixty to ninety seconds to cook.

Forno Rosso strives to make the most authentic Neapolitan pizza possible. Several of the ingredients used are sourced from Italy and from artisan companies in the United States. Imported items include Burrata (Bari, Italy), flour, San Marzano tomatoes and mozzarella di bufala (Naples Italy), prosciutto cotto, prosciutto crudo and parmigiano reggiano (Parma, Italy), extra virgin olive oil (Sicily, Italy), salame (Berkeley, CA), and sausage (sourced locally from Chicago).

Vera Pizza Napoletana is made with a soft dough and takes about one minute to cook in a Wood-Burning oven. Because of this Pizza Napoletana has several distinctive characteristics. Pizza in Napoli is soft and foldable and can be considered “wet” by American standards. For this reason, people in Napoli generally eat their pizza with a knife and fork. Blackened char spots on the pizza crust is a tell–tale sign of Pizza Napoletana that has been cooked in a blistering hot, wood-burning oven. Each Pizza is an individual work of art.

Our red oven, or Forno Rosso, was made by artisan oven makers in Napoli, Italy and is hand crafted using the highest quality materials to assure heat retention up to 1000F. The floor of the oven is made with “Biscotto Di Sorrento” and each brick is hand pressed in Sorrento, Italy. The mortar that is used to hold together the bricks, which comes from Santa Maria, the Campania region of Italy, is made with volcanic sand from Mt. Vesuvius.
